Description

Yeast protein is obtained from yeast biomass, normally Saccharomyces cerevisiae, processed to concentrate the protein fraction. It is of growing interest as a sustainable, non-animal protein that does not depend on arable land in the way plant proteins do, and it carries a complete essential amino acid profile. Beyond its nutritional contribution it brings a savoury character, which is useful in savoury and meat-alternative applications but needs managing in sweet formats. It is used in plant-based nutrition, meat alternatives, savoury products and animal feed. Protein content and the degree of flavour neutralisation differ between grades and should be confirmed.
