Description

Skimmed milk powder is made by separating the fat from whole milk and then evaporating and spray-drying what remains. It carries the protein, lactose and minerals of milk without the fat, and is one of the most widely traded dairy ingredients in the world. In manufacture it is used for protein and solids contribution, for body and mouthfeel, and for the browning and flavour development its lactose and protein provide during baking. It is used in bakery, confectionery, recombined dairy, beverages and nutrition products. Grades differ by heat treatment classification, which affects functional behaviour and should be specified.
