Description
Milk protein concentrate is produced by concentrating the protein of skimmed milk through membrane filtration, which retains both the casein and whey fractions in approximately the ratio they occur in milk — around eighty per cent casein to twenty per cent whey. That distinguishes it from whey products, which contain only the soluble fraction. The combination gives both the rapid availability of whey and the slower digestion of casein, which is useful in nutrition products aiming for a sustained profile. It is used in sports nutrition, clinical nutrition, bars, beverages and recombined dairy. Protein content varies between grades and is denoted in the grade name.
