Description
Soy protein is produced from defatted soybean material and is the longest-established of the plant proteins in nutrition formulation. It is distinguished among plant sources by having a complete essential amino acid profile, which is why it is used as a direct substitute for dairy protein in vegan products. Beyond nutrition it has genuine functional value in food manufacture, contributing emulsification, water binding, gelation and texture, which is the basis of its use in meat products, meat alternatives and bakery. It is supplied in concentrate and isolate grades differing in protein content. Soy is a declarable allergen in most markets.
