Description
Whey protein concentrate at the nominal 80% level, usually written WPC80, is the workhorse protein of the sports nutrition industry. It is produced from the whey stream of cheese manufacture by membrane filtration, which concentrates the protein while retaining a proportion of lactose and milk fat. That residual composition is what distinguishes it from isolate — it costs less and carries more flavour and body, at the expense of a higher lactose content. It delivers a complete amino acid profile and is naturally rich in branched-chain amino acids. It is used in protein powders, bars, beverages and bakery. The material is a cream-coloured powder.
