Description
Fructose is the simple sugar found naturally in fruit and honey, and is the sweetest of the common nutritive sugars — noticeably sweeter than sucrose, particularly in cold and acidic conditions, which is why it performs well in chilled beverages. That extra sweetness allows a formulator to reduce total sugar weight for the same perceived sweetness. It is also strongly hygroscopic, holding moisture in baked goods and extending softness, and it browns readily in Maillard reactions at lower temperatures than glucose. The hygroscopicity that helps in bakery makes it demanding to store, so moisture-protective packaging and controlled conditions are normal.
