Description
Micellar casein is obtained from skimmed milk by membrane filtration, a process that separates the casein fraction while leaving the protein in its native micellar form rather than precipitating and re-dissolving it as acid casein does. That structural difference matters in use — micellar casein forms a gel in the stomach and digests slowly, which is why it is formulated into overnight and sustained-release sports nutrition products and into clinical nutrition. It also contributes viscosity and body to a formulation. The material is a cream-coloured powder. Protein content, mesh and instantisation status vary by grade and should be confirmed on enquiry.
