Description
Maltodextrin is produced by partial hydrolysis of starch, usually from maize, tapioca or wheat, giving a polysaccharide of short chain length. Its behaviour is governed by its dextrose equivalent, or DE, which describes how far the hydrolysis has gone — lower DE grades are barely sweet and act mainly as bulking agents and film formers, while higher DE grades are mildly sweet and more readily soluble. It is used very widely as a carrier for flavours and concentrated actives, as a bulking agent, as a fat replacer, and as a rapidly available carbohydrate in sports nutrition. DE should be specified.
