Description

Whey permeate is what passes through the membrane when whey is ultrafiltered to concentrate its protein. It is therefore largely lactose together with minerals and a small residual protein content, and it is dried to a free-flowing powder. Its value in manufacture is economic and functional rather than nutritional — it delivers dairy solids, lactose for browning, and a mild dairy character at a lower cost than skimmed milk powder, and it is used as a standardising and bulking ingredient. Typical applications are bakery, confectionery, savoury blends, ice cream and animal feed. Milk is a declarable allergen in most markets.
