Description
Lactose is the disaccharide sugar of milk, composed of glucose and galactose, and is obtained commercially from whey. Edible grade is used across food manufacture, where its properties are notably different from those of sucrose — it is only mildly sweet — roughly a fifth the sweetness of sugar — which allows it to add bulk, body and browning without making a product sweeter. It participates readily in Maillard browning, which is exploited in bakery and confectionery for colour and flavour development. It is also widely used as a carrier and diluent for concentrated ingredients. Milk is a declarable allergen in most markets.
