Description
Whey powder is the spray-dried form of whole sweet whey, the liquid fraction separated during cheese manufacture. It retains the full composition of that stream — lactose predominantly, together with whey protein, minerals and a little fat — and is one of the most widely used dairy ingredients in food manufacture. It contributes dairy solids, browning through its lactose, and a characteristic mild dairy flavour, and it is used where the cost of skimmed milk powder is not warranted. Typical applications are bakery, chocolate and confectionery, soups and sauces, ice cream and animal feed. Milk is a declarable allergen in most markets.
