Description
Desiccated coconut is produced by shredding the white kernel of mature coconuts and drying it to a low moisture content, then grinding it to the required particle size. Powder and fine grades are used where the coconut character is wanted without visible shred — in bakery doughs and batters, confectionery fillings, chocolate, beverages and dairy applications. Coarser grades are used decoratively. It retains the natural oil of the kernel, which carries the flavour but also means the product is susceptible to oxidative rancidity over time, so storage conditions and stock rotation matter. Particle size grade should be specified for the intended use.
