Description
L-cysteine is a sulphur-containing amino acid with two distinct areas of use. In bakery it functions as a reducing agent that weakens the gluten network, shortening mixing time and improving dough extensibility, which is why it appears widely in industrial bread and biscuit production. In nutrition it is formulated into amino acid blends and supplement products, and it is a precursor to glutathione. The material is a white crystalline powder with a characteristic sulphurous odour, soluble in water. It oxidises on exposure to air, so it is normally stored in closed containers and used promptly once opened.
