Description

Glycine is the smallest and structurally simplest of the amino acids, and the only one without a chiral centre, so it has no D- and L-forms. It has a distinctly sweet taste, which is unusual among amino acids and is the basis of much of its use in food — it is formulated as a sweetness modifier and taste rounder in beverages, seasonings and savoury products, and it is used to soften the aftertaste of high-intensity sweeteners. Beyond flavour, it is a component of collagen and is widely formulated into nutritional and sports products. The material is a white crystalline powder, freely soluble in water.
