Description

DL-malic acid is the synthetic racemic form of malic acid, the acid responsible for much of the tartness of apples and other fruit. It is used across food and beverage manufacture as an acidulant and flavour enhancer, where its acidity builds more slowly on the palate than citric acid and lingers longer, an effect formulators exploit in fruit-flavoured drinks and confectionery. It is also used in sports nutrition, where it is frequently paired with amino acids as a malate salt. The material is a white crystalline powder, highly soluble in water. It is hygroscopic, so blends containing it are normally protected from moisture.
