Description
DL-alanine is a racemic blend containing equal proportions of the D- and L-forms of alanine. It is used chiefly as a flavour and taste-modifying ingredient in food manufacture, where it contributes a mild sweetness and is employed to round out savoury profiles, and as a component of amino acid blends. Because it is a racemate it is generally lower in cost than the single L-form, and it is selected where the specific nutritional role of L-alanine is not required. The material is a white crystalline powder, soluble in water. Where a formulation depends on the L-form specifically, L-alanine should be specified instead.
