Description
L-aspartic acid is one of the two acidic amino acids found in protein and is used both nutritionally and as a functional food ingredient. In food manufacture it contributes a sour, slightly savoury note, and it is a raw material in the production of the sweetener aspartame. Nutritionally it appears in amino acid blends, in mineral chelate production where it is used to form aspartate salts, and in sports nutrition. The material is a white crystalline powder with limited solubility in cold water, improving with warmth and with pH adjustment towards either extreme. Its solubility behaviour needs to be allowed for in liquid formulations.
