Description
Taurine is not a true amino acid — it carries a sulphonic acid group rather than a carboxylic acid group and does not appear in protein — but it is grouped with them commercially and biologically. It occurs at high concentration in muscle, heart and brain tissue, and participates in bile salt formation, calcium handling and osmoregulation. Commercially its largest single use is in energy drinks, and it is also formulated into sports nutrition, infant nutrition and pet food. The material is a white crystalline powder, freely soluble in water, odourless and with a mild taste, which makes it straightforward to formulate into clear beverages.
