Description
L-glutamic acid is the most abundant amino acid in dietary protein and the parent compound of monosodium glutamate. In its free acid form it is used in food manufacture as a flavour component contributing umami character, and as an acidulant, though the sodium salt is more commonly specified where full solubility is needed. Nutritionally it appears in amino acid blends and clinical nutrition formulations. The material is a white crystalline powder with limited solubility in cold water; solubility improves considerably at the extremes of the pH range. Where high solubility at neutral pH is required, the monosodium salt is normally selected.
