Description
Demineralised whey powder is produced by passing whey through ion exchange or electrodialysis to remove a proportion of its mineral content before drying. The degree of demineralisation is denoted by a D-number — D70, D90 and similar — indicating the percentage of minerals removed. Removing the minerals reduces the salty, sharp character of ordinary whey, which is why the more highly demineralised grades are the standard whey component in infant formula, and why the material is also used in confectionery, bakery and ice cream where a cleaner dairy note is wanted. The material is a white to cream powder. Milk is a declarable allergen in most markets.
