Description
N-acetyl-L-glutamine is glutamine carrying an acetyl group on the amino nitrogen. Free glutamine is not indefinitely stable in aqueous solution, degrading over time and faster with heat, which limits its use in ready-to-drink and liquid clinical products. The acetylated derivative is substantially more stable in solution and more soluble, which is precisely why it is selected for those formats. It is used in clinical and parenteral nutrition and in liquid sports nutrition. The material is a white crystalline powder, freely soluble in water. Glutamine content per unit weight is lower than that of free glutamine because of the acetyl group.
