Description
N-acetyl-DL-methionine is methionine with an acetyl group attached to the amino nitrogen. Acetylation reduces the characteristic sulphurous odour and bitter taste of free methionine and improves its stability in solution, which is why the derivative is selected for liquid nutritional preparations and for products where the sensory profile of plain methionine would be unacceptable. It is used in clinical and parenteral nutrition, in amino acid blends and in fortification. The material is a white crystalline powder, soluble in water. Because the acetyl group adds weight, methionine content per unit weight is lower than that of the free amino acid.
