Description
N-acetyl-DL-tryptophan is tryptophan carrying an acetyl group on the amino nitrogen. The derivative is notably more stable than free tryptophan, particularly against oxidation and light, and it is used where that stability is needed — most familiarly as a stabiliser in albumin solutions, and in liquid nutritional preparations. It also appears in amino acid blends. The material is a white to off-white crystalline powder with limited solubility in water, improving as pH rises. As with all racemates, only the L-form is biologically utilised for protein synthesis, so the D-portion should be accounted for where a nutritional claim is being built.
