Description
N-acetyl-L-glutamic acid is glutamic acid with an acetyl group on the amino nitrogen. In biochemistry it functions as an activator in the urea cycle. As an ingredient it is used in specialist nutritional formulations and as a research and synthesis intermediate, and it appears in amino acid preparations where the acetylated form offers better stability in solution than free glutamic acid. The material is a white crystalline powder, soluble in water.
