Description
L-proline is unusual among the amino acids in that its side chain closes back onto the nitrogen, forming a ring. That structure is what gives collagen its characteristic geometry, and proline together with glycine and hydroxyproline makes up a large proportion of collagen by weight. It is formulated into joint and skin nutrition products, collagen-building supplement blends, cosmetic preparations and clinical nutrition. The material is a white crystalline powder, freely soluble in water, and distinctly hygroscopic, so moisture-protective packaging is normal. It has a mildly sweet taste, which makes it straightforward to incorporate into flavoured products.
