Description
Ethyl maltol is the ethyl homologue of maltol and carries a sweet, caramellic, cotton-candy character. It is considerably more potent than maltol itself, which is why it is used at lower levels for the same effect. Its practical value in formulation is as a sweetness enhancer and flavour rounder — it lifts the perception of sweetness and masks harsh or bitter notes, which makes it useful in reduced-sugar products, in confectionery and in beverages. It is also used in fragrance. The material is a white crystalline powder, soluble in water and more so in warm water, and is effective at low inclusion levels.
