Description
Potassium sorbate is the potassium salt of sorbic acid and is among the most widely used preservatives in food manufacture, effective principally against yeasts and moulds and to a lesser extent bacteria. It is preferred over sorbic acid itself because it is far more soluble in water, and it works best in mildly acidic conditions, remaining useful at somewhat higher pH than benzoate. This listing covers two physical presentations of the same salt — the granular form is less dusty and easier to handle in bulk, while the powder dissolves faster and disperses more readily in dry blends.
