Description
Ethyl vanillin is structurally close to vanillin but carries an ethoxy group in place of the methoxy group, and the substitution makes it markedly more powerful — commonly cited as around three times the odour intensity of vanillin. Its character is vanilla-like but sharper and less rounded, and formulators frequently use the two together to obtain both the strength of ethyl vanillin and the natural fullness of vanillin. It is used in chocolate, confectionery, bakery, ice cream and fragrance. The material is a white to pale yellow crystalline powder, sparingly soluble in cold water and readily soluble in alcohol.
