Description
Sodium benzoate is the sodium salt of benzoic acid and is the form in which benzoate preservation is normally delivered, because it is far more soluble in water than the free acid. Like benzoic acid it works only in its undissociated form, so it is effective in acidic products — below roughly pH 4.5 — and loses activity as pH rises. It acts principally against yeasts and moulds. It is used in soft drinks, fruit preparations, dressings, sauces and personal care products. One formulation caution is well established — in the presence of ascorbic acid and certain conditions, benzoate systems require careful design, and this should be assessed at the development stage.
