Description
Sodium saccharin is the sodium salt of saccharin, the oldest of the commercial high-intensity sweeteners, several hundred times as sweet as sucrose and contributing no calories. The salt is used rather than the free acid because it is far more soluble in water. Its principal formulation characteristic is a bitter, metallic aftertaste at higher levels, which is why it is very commonly blended with cyclamate or with other sweeteners that mask it. Against that, it is exceptionally stable — to heat, to acid and over long storage — and inexpensive, which keeps it in wide use. The material is a white crystalline powder, freely soluble in water.
