Description
Disodium 5-ribonucleotide, commonly labelled as E635, is a roughly equal blend of disodium inosinate and disodium guanylate. Its importance in savoury formulation lies in synergy — on its own it contributes relatively little, but combined with monosodium glutamate it multiplies the perceived umami intensity far beyond what either delivers alone. That effect allows formulators to reduce total glutamate, or total salt, while maintaining savoury impact. It is used at very low levels in seasonings, snacks, instant noodles, soups and sauces. The material is a white crystalline powder, soluble in water. It is almost always used alongside a glutamate source rather than by itself.
