Description
Benzoic acid is the simplest aromatic carboxylic acid and one of the longest-established food preservatives. It acts against yeasts, moulds and some bacteria, but only in its undissociated form, which means it is effective in acidic conditions and loses activity as pH rises — in practice it is used in products below about pH 4.5, such as soft drinks, pickles and fruit preparations. Where a neutral-pH product needs preserving, benzoic acid is not the right choice. Its low water solubility is why the sodium salt is more often used in liquid systems. The material is a white crystalline powder or flake.
