Description
Monosodium glutamate is the sodium salt of glutamic acid and is the most widely used umami flavour enhancer in food manufacture. Free glutamate is what the tongue perceives as savouriness, and it occurs naturally in tomatoes, aged cheese, mushrooms and fermented products; MSG simply delivers it in a pure, consistent, freely soluble form. It is produced commercially by fermentation. Its effect is strongly synergistic with the 5-ribonucleotides, so the two are very often used together to reduce the total quantity of each. It also supports salt reduction, since it maintains savoury impact at lower sodium levels. The material is a white crystalline powder.
