Description
Isovanillin is a positional isomer of vanillin, differing in the arrangement of the hydroxyl and methoxy groups on the aromatic ring. That difference changes its character substantially — it does not carry the familiar rounded vanilla note of vanillin and is used principally as a chemical intermediate and in specialist flavour and fragrance work rather than as a direct vanilla substitute. It is a white to off-white crystalline powder, sparingly soluble in water and soluble in alcohol and common organic solvents. Because isovanillin and vanillin are easily confused by name, the intended material should be stated clearly on ordering documentation.
