Description
Sucralose is made from sucrose by selective chlorination, which produces a molecule roughly six hundred times as sweet as sugar that passes through the body largely unmetabolised. Its combination of properties is what makes it so widely used — a clean, sugar-like profile without the metallic note of some alternatives, and exceptional stability to heat, acid and prolonged storage, so it survives baking, retorting and long-shelf-life beverages where aspartame would degrade. It is freely soluble in water. Because it is intensely sweet, it is normally supplied or used as a dilution on a carrier to achieve accurate dosing in a finished blend.
