Description
Stevia preparations are obtained from the leaves of Stevia rebaudiana and owe their sweetness to a family of steviol glycosides, principally rebaudioside A and stevioside. They are high-intensity, non-nutritive sweeteners perceived as considerably sweeter than sucrose, with a sweetness onset that is slower and a finish that lingers, and higher-glycoside grades are used to reduce the liquorice-like note associated with cruder preparations. Because "stevia" covers a wide range of commercial products differing in glycoside profile and standardisation, the specific grade governs both sweetness intensity and taste quality, and should be confirmed on enquiry.
