Description
Neotame is a high-intensity sweetener structurally related to aspartame but carrying an additional substituent that makes it dramatically more potent — in the order of seven to thirteen thousand times as sweet as sucrose — and considerably more stable. Two practical consequences follow. First, it is used at extremely low inclusion levels, which places heavy demands on dilution and blending uniformity and means it is often supplied or handled as a premix. Second, unlike aspartame it does not require a phenylalanine declaration, because the quantity used is so small. It is a white powder with limited water solubility, stable to heat and across a wide pH range.
