Description

Aspartame is a dipeptide methyl ester built from aspartic acid and phenylalanine, roughly two hundred times as sweet as sucrose with a clean sugar-like profile and no significant aftertaste, which is why it remains widely used despite newer alternatives. Its principal formulation constraint is stability — it hydrolyses over time in solution, and more rapidly at elevated temperature or at pH values away from the mildly acidic optimum, so it is not suited to long-shelf-life liquids at neutral pH or to prolonged baking. Products containing it must carry a phenylalanine declaration in most markets. The material is a white crystalline powder of limited water solubility.
