Description
Soya sauce powder is produced by drying liquid soy sauce, normally by spray drying onto a carrier such as maltodextrin, which converts a liquid condiment into a free-flowing powder suitable for dry blending. It carries the savoury, fermented, umami-rich character of soy sauce along with its colour and saltiness, and it is used wherever that flavour is wanted without adding water to the formulation — in snack seasonings, instant noodles, dry marinades, sauce mixes and ready meals. The material is a light to dark brown powder, soluble in water. Soy and, in many specifications, wheat are declarable allergens in most markets.
