Description
Cheese powder is produced by drying cheese, normally by spray drying a cheese emulsion, sometimes with enzyme-modified cheese included to intensify the flavour so that less solids are needed for the same impact. It delivers cheese character in a dry, shelf-stable, free-flowing form, which is why it is the backbone of snack seasoning systems and is used in sauce mixes, ready meals, bakery fillings and dry culinary products. Flavour intensity, cheese type and carrier system differ substantially between specifications and govern how the material performs. Milk is a declarable allergen in most markets. The material is a pale yellow to orange powder.
