Description

Niacin, or nicotinic acid, is one of the two common forms of vitamin B3 and, like niacinamide, is a precursor to the coenzymes NAD and NADP. Unlike niacinamide it produces a transient cutaneous flushing response at higher intakes, a well-recognised effect that governs which form a formulator chooses and that is sometimes sought deliberately in particular products. It is used in food and flour fortification, in multivitamin preparations, in energy formulations and in animal nutrition. The material is a white crystalline powder, sparingly soluble in cold water and more soluble in hot water and in alkaline conditions. It is stable to heat and light.
