Description
L-carnosine is a naturally occurring dipeptide formed from beta-alanine and L-histidine, found in muscle and brain tissue. It is formulated into sports nutrition products, general supplements and topical cosmetic preparations, and interest in it centres on its antioxidant and carbonyl-scavenging behaviour. As a material it is a white crystalline powder, soluble in water. Because it is a peptide rather than a single amino acid it is more sensitive than most amino acids to heat and to extremes of pH, so process conditions need to be considered when it is formulated into anything that is heat-treated. It is typically used at low inclusion levels.
