Description

Inulin is a storage carbohydrate made up of fructose chains, obtained commercially from chicory root and occurring naturally in a range of plants. It passes undigested to the colon, where it is fermented by gut bacteria, which is the basis of its classification as a prebiotic soluble fibre. In formulation it does useful technical work as well — longer-chain grades form a creamy gel that mimics fat, making them valuable in reduced-fat dairy and spreads, while shorter-chain grades are mildly sweet and dissolve easily. It is used for fibre enrichment, sugar and fat reduction and texture. Chain length distribution governs behaviour and should be specified.
