Description
Glutathione is a tripeptide built from glutamic acid, cysteine and glycine, and is one of the principal intracellular antioxidants in the body. It exists in reduced and oxidised forms, and the reduced form is the one normally specified for formulation. It is used in antioxidant and skin-tone supplement products, in cosmetic preparations and in functional beverages. The material is a white to off-white crystalline powder, soluble in water, with a characteristic sulphurous note from the cysteine residue. Being a peptide it is more sensitive to heat, oxidation and pH extremes than a simple amino acid, so process conditions need attention.
