Description
Ginger extract is produced from the rhizome of Zingiber officinale. Its characteristic pungency comes chiefly from gingerols in the fresh material, which convert to shogaols on drying and heating, and commercial extracts are commonly standardised to a declared content of these compounds. It is used in nutraceutical and herbal supplement formulation, in functional beverages and in food and flavour applications where a concentrated ginger character is wanted without the bulk of the raw spice. The material is supplied as a powder or as an oleoresin. Standardisation level, extraction solvent and physical form differ between specifications and should be confirmed.
