Description
Dextrose is glucose in its crystalline form, produced by the hydrolysis of starch. It is around three-quarters as sweet as sucrose and is absorbed rapidly, which is the basis of its use in sports and clinical nutrition. This listing covers both commercial forms. The monohydrate carries one molecule of water of crystallisation and is the general-purpose, lower-cost grade. The anhydrous form contains no water, delivers more solids per unit weight and is preferred in dry blends, in tabletting and where moisture must be minimised. Dextrose gives a noticeable cooling effect as it dissolves and browns readily in Maillard reactions.
