Description

Citric acid is a tricarboxylic acid occurring naturally in citrus fruit and produced commercially by fermentation. It is by a wide margin the most used food acidulant, providing a clean, immediate sourness, adjusting pH, chelating metal ions and acting as an antioxidant synergist. This listing covers both commercial forms — the anhydrous grade contains no water of crystallisation and is preferred for dry blends and powders where moisture would be a problem, while the monohydrate is the general-purpose form used in most liquid and solution applications. Both dissolve freely in water. Which form is supplied should be confirmed at the order stage.
